A friend of mine is in need of a detox diet and is not allowed to have starches. This recipe is great for that. The beginning of the year I got this out of one of my magazines. It is a great recipe. easy, effortless and most important yummy!!! Being that I live here in Hialeah, Florida… It is important to know how to substitute rice for something healthy. This truly is great but, hard for Cubans to get used to.
Cauliflower “Rice” Stir Fry
Pulse 2 cups of cauliflower in a blender
Heat 1 Tbsp coconut oil in Lg skillet over med. heat
Add 1/2 sliced red onion and minced garlic Saute
til tender. Add cauliflower and salt. Add 1/4 C cleansing broth.
Cover and simmer to broth is evaporated and cauliflower is tender about 6 min.
transfer to a bowl, and cover. Wipe out pan, and Heat ! Tbsp oil. Add the other half of red onion
and cook stirring til tender. Add 1 Tbsp each Garlic and Ginger, Chili pepper to taste.
Add 2 C broccoli florets, 1 lg carrot julienned, 1/2 diced red pepper and cook stirring til tender 5 min.
Remove from heat and add Juice from 1/2 lemon. Serve over “rice” Cauliflower and top with cilantro.
