Fill U Up Energy/Protien Pucks

Hey there, I know I talked about the Fill U Up Pucks back in November. I hope you signed up for emails to be told when I post things. If not now is a great time to do that. Over in the right hand sidebar. Ok Well Here is what they look like.

The top layer here is the ones I put Greens+ in and the bottom ones are the ones without. I use those for the husband because he does not like green stuff. Ok next up was the ingredients.

Ok and now for the proportions. Which you can play with for things you like and omit stuff you do not. Just by adding cinnamon you get such a change. Change is good, it breaks up the day after day routines we get stuck in sometimes.
So here is a basic mixture. I split in half or in fours and add different stuff for a little pep in my life. Hahaha! Yes sometimes seasoning or flavorings can do that for me. It is nice to have things hum drum.
Ingredients:
1 3/4 C. Dates
1/4 C. Water
1 Tbsp.+ 1 tsp. Coconut oil
1/4 C. nut butter ( Tahini, sunflower, almond, cashew.)
1 C. Almonds
1 C. Mixed Seeds
( I use 1/3 each Sunflower, Pumpkin, & Hemp. But, I have also added 1/3 C of a mix i make half & half Chia + Flax seed, Pine nuts or Sesame seeds)
1/3 C. Coconut flakes
I blend each thing separately until it is course chopped, like other store bought ones.
Depends on how much chewing you want to do.
After each thing is chopped I pour it in a bowl.
The last thing processed because it is sticky and messy I do the dates, water and coconut oil. Add them to the bowl of nuts and seeds, and then mix.
Form into pucks and layer with wax paper.
I store them in snack size bags in the frig. About 6 or 8 to a bag.
Makes about 32 pucks 1 1/2″ round
I carry snack bags of them in my purse for those times. To avoid junk food in check out lines and fast food joints. They last for a month or so.

Buckwheat Groats Veggie Patties

Hi there,
I am happy you came back to see the recipe. I did start the pattie yesterday. Having been sick with some kind of bad cold bug, I could not finish it in one day as usual. That is a key part in making of the patties, all the ingredients should be cooled before mixing. I made the groats with 2 cups water one cup groats (just like most grains). I sauteed the veggies, and refrigerated both, once done. That was yesterday. Today I just mixed it together , formed the patties, and baked. Oh, I also added grill marks for the purpose of show. You would hardly know these were not meat. Once you put your toppings on it even the texture was perfect. I eat them bunless because the groats are enough starch I believe. For me and for being Alkaline that works. Oh and no egg in this one so it is a alkaline dream!!!

So here is the recipe…
1 1/2 C Buckwheat groats cooked and cooled ( use stock as liquid instead of water)
Diced Onion 2/3 C
Diced Green & Red pepper combined to make 2/3C,
Finely minced Garlic 2 or more Tbsp
Diced Mushroom 2/3 C (but not if making alkaline)
Parsley, Real salt, and pepper to taste
Eggplant, Zucchini, Summer squash, Ect. You get the picture, lots can be added.
3 Tbsp of flax, chia, and hemp seeds Ground (I do this in a coffee mill I use for herbs and seed) to replace egg. I do not add water
Saute the veggies in about 2 Tbsp olive oil. Remember you are not browning or cooking to mush, this takes very little time.
Once cooled combine the groats with the veggies and add the ground seeds.
Form the mixture into patties and place on a baking pan coated with olive oil.
(I spray the top side with olive oil as well)
Then do the grill marks using a skewer dipped in Kitchen bouquet.
When you flip you can do the second side!
Bake at 425* for 10 minutes on each side.

Feeling Greek Avocado Tzatziki

1 large avocado, peeled and pitted
2 cloves garlic, minced
1 lemons, juiced
1/2 cup chopped seeded cucumber
1/2 teaspoon red pepper flakes, or to taste
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh mint
salt and pepper to taste
In a medium bowl, combine the avocado, garlic, lemon juice, and cucumber. Mash with a fork until smooth.( If your avocado is not quite ripe enough, you may wish to use a food processor.) Season with red pepper flakes, cilantro, mint, salt and pepper, and mix well. Cover and refrigerate for 1 hour before serving.

Goro cookies

Not leaving out Jesus and remembering Christmas’ before things got so complex.
I am selling a press to make these on Ebay. I found this recipe for the cookies and wanted to share it. Just a great Holiday tradition and those are so important to many people this time of year. So few people cook Norwegian goro “crackers” nowadays that they can become a signature gift for cooks who take the time to bake them for friends and teachers during the holidays. They are sort of a cross between a cookie, a cracker, and a waffle – not too sweet, and quite possibly the most beautiful of all Scandinavian baked goods.

INGREDIENTS
3 eggs
1 cup sugar
1 Tbsp. vanilla sugar (or 1 tsp. vanilla)
1 cup whipped cream, whipped to firm peaks
1 cup butter, melted
1 Tbsp. brandy or cognac (optional)
6 to 7 cups all-purpose flour
1 tsp. freshly ground cardamom
1/2 tsp. cinnamon (optional)
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

PREPARATION
Trace a rectangular pattern the same size as your goro iron onto parchment or other paper; cut out. Spray goro iron lightly with cooking spray and heat, closed, over medium-high burner until a drop of water sizzles on the surface when opened.

Beat together three eggs, sugar, and vanilla sugar (or vanilla). Fold in whipped cream and melted butter. Stir in cognac, if using. Sift together 6 cups of flour, cardamom and cinnamon, then mix into batter. Add additional flour, if needed, until dough is very firm (it should be about the consistency of pizza dough).

Separate the dough into thirds, and roll each portion out on a floured surface to a 1/8″ thickness. Place paper pattern on dough and cut squares the size of your goro iron.

Transfer each dough square to the goro iron, close iron, and cook the first side for 3-4 minutes, pressing the iron’s handle together lightly to impress pattern upon the cracker (Note: keep a wet towel on hand to immediately wipe up any butter than leaks from the press). Flip iron and cook for an additional 3-4 minutes, until both sides of cracker are golden brown.

Transfer cracker to rack to cool; while still warm, cut into the individual sections and trim off outside edges (if desired). Repeat process with remaining dough (rerolling scraps as necessary).

Freeze or store in an airtight container.

Yield: Approx. 48 goro cookies.

I just liked it and wanted to share it. There is some I would add. God gives us all we need and cooking seems to be just one of those things we know how to do. Is that true of you? We know right from wrong  because He guides us. God is not in this writing and it is a talent I believe He gives. Some more than others.

Vegan Coconut Ginger Soup

I will for the sake of argument call my soup this. Pictured I added beef, For dinner I had it with fish and another time with chicken. Now I can tell you originally I made this with mushroom as the substance (meat) of the dish.
Ingredients
1 tblsp coconut oil to saute
onion celery carrot  cabbage about 1/2 cup each
1 tblsp garlic minced
1 tblsp ginger minced
2 tsp cayenne pepper
16 oz vegetable stock
1/2 C coconut milk
Simmer for 10 minutes or til ready to eat. I have been hungry and eaten it as soon as it was done as well as had it left over good from start to finish and so many options as far as what you can add for substance.  Dry Shitake mushrooms soaked in wine, chicken, beef, shrimp, fish, even just shredded coconut.
I am learning new things every day from my newest Jamaican friend. Today I learned about how to make coconut oil. Be looking for that in up coming blog updates.

Hello, Here is a great 4th of July cool down dessert. You can have the slices and toppings ready and do a build your own or I just went ahead and made them up. One for a friend, One to bring to my Mom’s and One for me to have here. So I had the containers ready to go, and built them right in the container. Now looking back I know that you should cut them ahead of putting them in the container, because when you cut you end up marking the container.

Squeeze mango seed to juice like a sauce Then the strawberry pepperoni and Blueberry olives.

I took the seed of the mango after cutting off most of the meat and squeezed some juices on the watermelon to look like a sauce. Next slice up the strawberries and spread them like pepperoni, The blueberries I used like olives however if you cut them they look great too, as you can see in the picture. I tried all different ways on the three of the pizzas so it really is a any way you want kinda thing.  I sliced mango and put it on before the other fruit and I liked it that way best.20140630 046 20140630 044
Yum Top it with some shredded coconut to look like the cheese. And all good cooks know it is not finished til you add the herbs and spices. O:) For that out to the garden to pick some mint and stevia. Sprinkle those on top and spritz with lemon juice. This is great served chilled. But I have to say they are good any way but… BEST Shared with friends!!!
