Tiger’s/Dragon’s Blood Icee

Hey, How’s it going? I have been trying to eat clean. Over the summer I found an Italian ice that RaceTrac sold and really liked it. Well the sugar was really high and the process well who really knows how they made it. The picture that they had to explain it … A slice of watermelon. a strawberry, and I seem to recall a lime or coconut maybe both. So off I went to recreate the taste I liked so well.
I added fresh stevia from my garden which I had dried and powdered.  I poured it into Popsicle form and froze. Now I can have my treat (and it is healthy as well as yummy) any time I want it.


To eat it watching this sunset… Who could ask for more!!!

Also a side note to this the watermelon rind (with outer skin removed, if it is waxed and to reduce chemical consumption if not organic) is great to put through the juicer. Much like a cucumber with way more vitamin content… Take a look at what doctors say…

I went through at least one a week all summer boy am I gonna miss them til they are in season. Although I have a plant started in the yard. I have noticed it is getting harder all the time to find them with seeds still. GRRRRRRR GMO’s Well, I can’t fix the world I guess I will just keep trying my best and wait upon the Lord!!!

Vegan Coconut Ginger Soup

I will for the sake of argument call my soup this. Pictured I added beef, For dinner I had it with fish and another time with chicken. Now I can tell you originally I made this with mushroom as the substance (meat) of the dish.
1 tblsp coconut oil to saute
onion celery carrot  cabbage about 1/2 cup each
1 tblsp garlic minced
1 tblsp ginger minced
2 tsp cayenne pepper
16 oz vegetable stock
1/2 C coconut milk
Simmer for 10 minutes or til ready to eat. I have been hungry and eaten it as soon as it was done as well as had it left over good from start to finish and so many options as far as what you can add for substance.  Dry Shitake mushrooms soaked in wine, chicken, beef, shrimp, fish, even just shredded coconut.
I am learning new things every day from my newest Jamaican friend. Today I learned about how to make coconut oil. Be looking for that in up coming blog updates.

Hello, Here is a great 4th of July cool down dessert. You can have the slices and toppings ready and do a build your own or I just went ahead and made them up. One for a friend, One to bring to my Mom’s and One for me to have here. So I had the containers ready to go, and built them right in the container. Now looking back I know that you should cut them ahead of putting them in the container, because when you cut you end up marking the container.

Squeeze mango seed to juice like a sauce Then the strawberry pepperoni and Blueberry olives.

I took the seed of the mango after cutting off most of the meat and squeezed some juices on the watermelon to look like a sauce. Next slice up the strawberries and spread them like pepperoni, The blueberries I used like olives however if you cut them they look great too, as you can see in the picture. I tried all different ways on the three of the pizzas so it really is a any way you want kinda thing.  I sliced mango and put it on before the other fruit and I liked it that way best.20140630 046 20140630 044
Yum Top it with some shredded coconut to look like the cheese. And all good cooks know it is not finished til you add the herbs and spices. O:) For that out to the garden to pick some mint and stevia. Sprinkle those on top and spritz with lemon juice. This is great served chilled. But I have to say they are good any way but… BEST Shared with friends!!!

Granola Oatmeal Bars

The cookbook  I adapted this recipe from is called Fat-Free Baking By: Sandra Woodruff, RD
Really these came out best and I will use this as a basic all purpose Bar with many variations. I enjoy tweeking recipes and flavors Craisins and pistashio for example. But for this first try I followed as close as I could with the ingredients.
Instead of:
1/4 cup of wheat germ (I used a packet of cream of wheat.)
1/4 cup whole wheat flour  (I used flax seed powder.)
1/3 cup raisin or apricots ( dried apple chips and craisins.)
I bet dates, nuts and/or seeds. What about ginger instead of cinnamon? Yummy
Ginger is proved to have a capacity of improving metabolism.
Improved metabolism is the key to lose weight naturally and healthily.
What would you add or change? Let me know if you try this please interesting to hear from you!!!

But, I really needed to use up some old bananas, that was really the part that got me started on making a granola and using banana instead of egg so they would be Vegan. So, my first thought had been to make my A.B.C. P.R.O. Bars. Which for the life of me I can not find the recipe. It was on an old computer… so oh well. I started to look through all my recipes and found that one but it does not call for bananas. Well I got all this stuff. So I started. Nope, no Wheat germ… OK Flax seed I do have. I also have whole red wheat… That won’t work I have cream of wheat. O:) That worked!!! So they come out good but plain old. So onto my A.B.C. P.R.O. Bars( which is Apple, Banana, Cranberry, Peanut butter, Raisin, Oatmeal ) So I searched up those things and looked for energy bars with those ingredients. So here is what I came up with…

A.B.C. P.R.O. Bars
Makes 12-16 bars (depending how large you cut them).
Bars stay fresh for up to one week in a  Zipper bag at room temperature or in the refrigerator longer.
Vegan option: see note below. Gluten Free option: see note below.
2 and 1/2 cups old-fashioned rolled oats (I used quick oats)
1/4 cup dark brown sugar, loosely packed (or light brown sugar)
1 teaspoon baking powder     1/2 teaspoon salt     1 teaspoon ground            cinnamon
1/2 cup milk (regular, almond milk, or even powdered fat-free)
(I used 1/4 c of ff milk and 1/4 c Apple butter)
1 teaspoon vanilla extract ( what about a variation here)
1 large egg (or 1 “flax” egg – see note below for vegan option)
(2 Tbsp flax and no water added another banana so I used 3 bananas total)
2 large very ripe bananas, mashed      1/3 cup creamy peanut butter
1/2 cup semi-sweet chocolate chips   and or     1/2 cup peanut butter chips
( I used 1/2 cup diced dried apple, 1/2 cup craisins, and 1/2 cup shredded coconut)

Preheat oven to 350F degrees. Spray 8×8 square (or 9×9 inch) baking pan with cooking spray or line with parchment paper. Set aside.
Mix together oats, brown sugar, baking powder, salt, and cinnamon. Add in the milk, vanilla, and egg. Mix together until evenly combined. Add mashed bananas, peanut butter, chocolate chips, and peanut butter chips. Stir well.
Pour the mixture into the pan and bake for 20 minutes. Allow to cool and cut into bars.

Notes: these bars can easily be made vegan by using vegan chocolate chips + vegan putter butter chips and using a “flax egg” instead of a regular egg. Flax egg = mix 1 tbsp ground flax with 3 tbsp warm water and let it sit for 10 minutes while it “gels” up. Use the “flax gel” as a replacement for the egg.
* make sure your oats are certified gluten free to ensure these bars will be gluten free.
